Ingredients

  • 10 boneless chicken breasts
  • 2 c. flour
  • dash of pepper
  • 1 c. oil
  • 1 c. white dry wine
  • lemon rind
  • 2/3 c. lemon juice
  • 1/2 lb. prosciutto
  • 1/2 lb. butter
  • 2 cloves garlic

Instructions

  1. Flour the chicken strips and sauté in hot oil until golden brown.
  2. Remove the chicken to a baking dish and discard the oil from the pan.
  3. Melt the butter in a separate pan.
  4. Add chicken broth, lemon juice, lemon rind, prosciutto, wine, and minced garlic to the melted butter.
  5. Simmer the mixture for 10 minutes.
  6. Pour the sauce over the cooked chicken and serve.
