Ingredients

  • 3 cups cooked chicken, cut up
  • 2 1/2 cups seedless green grapes, halved
  • 2 cups diced celery
  • 1 1/2 cups mayonnaise
  • 1/3 cup milk
  • 1 1/2 tablespoons chutney
  • 1 1/2 teaspoons curry powder
  • 1/4 teaspoon salt
  • 1 1/2 large cantaloupes, cut into wedges
  • lettuce leaves

Instructions

  1. In a medium bowl, combine the cooked chicken, halved green grapes, and diced celery.
  2. In a separate small bowl, mix mayonnaise, milk, chutney, curry powder, and salt until smooth.
  3. Pour the dressing over the chicken mixture and toss until well blended.
  4. Place cantaloupe wedges on individual serving plates on top of lettuce leaves.
  5. Spoon the chicken salad onto the cantaloupe wedges and serve.
