Ingredients

  • 4 large whole chicken breasts, boned and cut in half
  • 1 can mushroom soup
  • 1 small can mushroom caps
  • 1 cup sour cream
  • 1 cup sherry (optional)
  • 2 packages frozen broccoli spears
  • 1/2 lemon
  • paprika

Instructions

  1. Cook the broccoli in boiling water until tender, then drain.
  2. Place the cooked broccoli in a buttered flat casserole dish.
  3. Squeeze lemon juice over the broccoli evenly.
  4. Arrange the chicken breasts skin side up on top of the broccoli.
  5. In a bowl, combine mushroom soup, drained mushroom caps, sour cream, and sherry (if using).
  6. Pour the mushroom mixture over the chicken breasts.
  7. Sprinkle generously with paprika.
  8. Bake in a preheated oven at 350°F (175°C) for 1 hour until the chicken is cooked through and bubbly.
