Ingredients

  • 4 chicken breasts, boneless
  • 1 egg
  • 1/2 cup water
  • 3/4 cup all purpose flour
  • 1 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Cut chicken breasts into 1-inch pieces.
  2. Heat 3 inches of oil in a large heavy saucepan over medium heat until it reaches 375°F, then adjust heat to maintain temperature.
  3. Meanwhile, beat egg and water in a large bowl until well mixed.
  4. Add flour, salt, and pepper to the bowl, stirring to form a smooth batter.
  5. Dip chicken pieces into the batter, draining off excess.
  6. Fry chicken in hot oil about 4 minutes or until golden brown, working in batches if necessary.
  7. Drain fried chicken on paper towels and serve with sauces.
