Ingredients

  • 1 c. chickpeas, minced and drained
  • 1 c. cucumber, cubed
  • 2 c. tomatoes, cubed
  • 1 c. sweet yellow onion, cubed
  • 2 Tbsp. red wine vinegar
  • 1 Tbsp. olive oil
  • 2 Tbsp. basil
  • 1 Tbsp. parsley
  • salt and pepper to taste

Instructions

  1. In a large bowl, combine chickpeas, cucumber, tomatoes, onion, basil, and parsley.
  2. Add red wine vinegar, olive oil, salt, and pepper.
  3. Toss to blend all ingredients well.
  4. Let stand for 1 hour before serving.
