Ingredients

  • 7 1/2 cups barley
  • 5 chopped onions
  • 2 1/2 teaspoons oregano
  • 3 bay leaves
  • 20 tablespoons margarine
  • 3 cloves garlic, minced
  • 2 1/2 teaspoons basil
  • 2 1/2 pounds sliced mushrooms
  • 11 cups orange juice
  • 2 1/2 teaspoons salt

Instructions

  1. Brown the barley lightly in margarine.
  2. Add chopped onions and minced garlic. Stir over moderate heat for 5 minutes.
  3. Add spices and sliced mushrooms. Stir to mix.
  4. Add stock, orange juice, and salt.
  5. Bring to a boil.
  6. Cover tightly and bake in a preheated 350°F oven for 1 1/2 hours or until liquid is absorbed and barley is barely tender.
  7. Add additional liquid if necessary. Barley should be firm and chewy.
  8. Serve hot.
