Ingredients

  • 2 chicken breasts or 1 large can white meat chicken
  • Broccoli (or any vegetable or combination of vegetables)
  • 1/2 cup shredded cheese or 1 cup fat-free cheese
  • 3/4 cup low-fat biscuit mix
  • 3 eggs or Egg Beaters
  • 1 1/2 cups skim milk

Instructions

  1. Spray a pan with non-stick spray.
  2. Layer the chicken, vegetables, and cheese in the prepared pan.
  3. Pour the batter over the layered ingredients.
  4. Bake at 350°F for about 45 minutes until set and golden.
