Ingredients

  • 1 cup rice
  • 2 cups boiling water
  • 1 to 2 stalks celery, chopped
  • 1 can cream of mushroom soup
  • 1 can cream of celery soup
  • 5 to 6 chicken thighs, cut up
  • 1 package dry onion soup mix

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a 9 x 13-inch pan, mix together the rice, boiling water, chopped celery, cream of mushroom soup, and cream of celery soup.
  3. Lay the raw chicken pieces on top of the rice mixture.
  4. Sprinkle the dry onion soup mix evenly over the chicken and rice mixture.
  5. Cover the pan tightly with foil.
  6. Bake for 3 hours without peeking.
