Juicy chicken breasts coated in crushed Ritz crackers, topped with mushrooms and cheese, then baked in a flavorful wine and chicken broth mixture for a comforting meal.

Ingredients

  • 4 whole chicken breasts
  • 4 eggs
  • 1 roll Ritz crackers
  • 1 lemon
  • 6 slices Muenster cheese
  • 1/2 cup chicken broth
  • 1/2 cup white wine
  • 1 small package fresh mushrooms

Instructions

  1. Soak chicken breasts in beaten eggs overnight.
  2. Roll chicken in crushed Ritz crackers and brown in oil.
  3. Place browned chicken in a pan.
  4. Cover and refrigerate until ready to bake.
  5. Cover chicken with mushrooms and squeeze lemon juice over them.
  6. Mix white wine and chicken broth.
  7. Pour the wine and broth mixture over the chicken.
  8. Place slices of Muenster cheese on top.
  9. Cover with foil, leaving a corner turned back.
  10. Bake at 350°F (175°C) for 40 to 45 minutes.
