Ingredients

  • 4 boneless, skinless chicken breasts
  • 12 corn tortillas
  • 1 jar salsa
  • 8 oz. shredded cheddar cheese

  • 1 (11 oz.) can cream of mushroom soup
  • 1 (12 oz.) can chicken broth

Instructions

  1. Cut chicken breasts into 1/2 inch cubes.
  2. Fry chicken cubes in 3 Tbsp. olive oil.
  3. Season chicken with salt, black pepper, white pepper, cumin, and paprika while frying.
  4. Cut tortillas in half and then into strips, creating four strips per tortilla.
  5. Boil and combine both cans of cream of chicken and mushroom soups with chicken broth in a saucepan.
  6. Grease a 9 x 13 baking dish and cover its bottom with half of the tortilla strips.
  7. Spread half of the cooked chicken cubes over the tortilla layer.
  8. Spread half of the salsa over the chicken.
  9. Season with the spices used during frying.
  10. Sprinkle half of each shredded cheese over the layer.
  11. Repeat the layering process: tortillas, chicken, salsa, spices, and cheese (except do not add cheese in the second layer).
  12. Pour the soup mixture over the assembled layers in the dish.
  13. Top with the remaining cheese and sprinkle ground parsley leaves for appearance.
