- Cut up the chicken and break the bones.
- Cook the chicken in 3 quarts of water until very tender, adding water as it boils away to maintain the 3-quart volume.
- Remove the meat and bones from the kettle.
- Pour the soup into an earthen dish and let it stand until cold.
- Remove every particle of fat from the stock.
- Pour the clarified stock into a saucepan and set on the stove.
- Prepare 1/2 cup of rice.
- Add the rice to the soup and cook until tender.
