Juicy chicken breasts stuffed with flavorful rice mixture, baked in a creamy mushroom sauce with sherry, perfect for comforting family dinners or special occasions.

Ingredients

  • 8 chicken breast halves, skinned, boned and flattened
  • 4 servings rice
  • 6 green onions, chopped
  • 1/2 green pepper, chopped
  • 1 medium tomato, chopped
  • salt and pepper to taste
  • 1 can cream of mushroom soup
  • 1/2 can water
  • 1/4 cup cooking sherry

Instructions

  1. Cook the rice until tender.
  2. Add chopped green onions, green pepper, tomato, salt, and pepper to the cooked rice and toss well.
  3. Stuff each chicken breast with the rice mixture and secure with toothpicks if needed.
  4. Place the stuffed chicken breasts in a baking dish or pan.
  5. In a separate bowl, mix together the cream of mushroom soup, water, and sherry.
  6. Pour the mushroom mixture over the stuffed chicken breasts.
  7. Bake at 350°F for 45 minutes or until the chicken is cooked through.
