Ingredients

  • 8 oz. pkg. soyameat, chicken style
  • 2 hard-cooked eggs
  • 1/3 cup fat-free Mocha Mix
  • 1/4 cup minced onion
  • 1 tablespoon margarine (Nucoa)
  • 1/2 teaspoon salt

Instructions

  1. Grind slices of soyameat and hard-cooked eggs.
  2. Saute minced onion in margarine until translucent.
  3. Add the sautéed onion to the ground soyameat and eggs mixture.
  4. Stir in Mocha Mix and seasonings.
  5. Shape the mixture into croquettes and roll in crumbs.
  6. Bake in a 350°F oven until lightly browned, about 25 to 30 minutes.
