Ingredients

  • 1 lb. chicken breasts, skinned and boned
  • 1/8 tsp. pepper
  • 3/4 cup chicken broth
  • 2 Tbsp. dry white wine
  • 1 lb. spinach
  • 2 tsp. cornstarch
  • 3 oz. Neufchatel cheese, cut up
  • lemon juice
  • paprika
  • lemon slices (garnish)

Instructions

  1. Place chicken breasts in a skillet.
  2. Sprinkle with pepper.
  3. Add chicken broth and white wine; bring to a boil.
  4. Reduce heat to simmer.
  5. Cover and cook for 25 to 30 minutes.
  6. Remove chicken with a slotted spoon and keep warm.
  7. Reserve broth in the skillet.
