Ingredients

  • 3 to 4 lb. disjointed chicken
  • 1 tsp. salt
  • 1/2 lb. butter, melted
  • 1 lb. cooking apples, peeled, cored, and thinly sliced
  • 1 tsp. sugar
  • 1 c. Macadamia nuts, coarsely chopped
  • 2/3 c. apple cider
  • 1 c. rice, cooked

Instructions

  1. Sprinkle the disjointed chicken with salt.
  2. Brown the chicken in melted butter in a skillet.
  3. Remove the chicken and butter and place into a large baking dish.
  4. Mix the sliced apples with the chicken.
  5. Sprinkle the mixture with sugar and chopped macadamia nuts.
  6. Add apple cider to the dish and cover.
  7. Bake at 375°F for 40 to 45 minutes.
  8. Serve with a mound of steamed rice.
