  • 2 c. hot water

  1. Put chopped onion and oil into a 3-quart casserole. Cover tightly and microwave on High for 2 to 3 minutes.
  2. Wash rice briefly in a sieve under cold, running water; drain well.
  3. Add rice, instant chicken bouillon, allspice, turmeric, curry powder, pepper, raisins, and hot water to the casserole with the cooked onions and oil. Cover tightly.
  4. Microwave on High for 7 minutes; stir.
  5. Cover and microwave until liquid is almost absorbed, 8 to 10 minutes longer. Stir.
  6. Cover and let stand for 10 minutes.
  7. Stir again and top with almonds before serving.
