Chicken Mandarin offers tender chicken pieces coated in a light flour crust, simmered in a tangy citrus sauce with sweet mandarin oranges. Ingredients

  • 2 1/2 to 3 lb. chicken pieces
  • 1/4 cup flour
  • 2 Tbsp. margarine
  • 2 Tbsp. oil
  • 4 Tbsp. lemon juice
  • 1/2 cup orange juice
  • 2 Tbsp. honey
  • 1/2 Tbsp. soy sauce
  • 1/2 tsp. powdered ginger
  • 11 oz. can mandarin oranges with juice

Instructions

  1. Wash and dry the chicken pieces.
  2. Shake the chicken pieces in a paper bag with flour to coat evenly.
  3. In a skillet, heat the oil and margarine over medium heat.
  4. Add the coated chicken pieces to the skillet and brown each piece on all sides.
  5. Drain the mandarin oranges and set aside.
  6. Mix the juice from the can of mandarin oranges with lemon juice, orange juice, honey, soy sauce, and powdered ginger to make the sauce.
  7. Pour the sauce over the browned chicken in the skillet.
  8. Cover and simmer for 30 minutes or until the chicken is tender.
  9. Add the mandarin orange sections to the skillet 5 to 10 minutes before the chicken is done and cook until heated through.
  10. Serve the chicken with rice, garnished with the mandarin oranges.
