Ingredients

  • 4 chicken breast halves, boned and flattened to even thickness (about 3/8-inch)
  • 1/2 cup flour
  • 1/3 cup Parmesan cheese
  • 1 to 2 tablespoons parsley flakes
  • 1 egg
  • 3 tablespoons half and half

Instructions

  1. Dredge each piece of chicken in plain flour, then dip in the beaten egg, half and half mixture.
  2. Combine Parmesan cheese and parsley flakes in a shallow pan and coat the chicken with this mixture.
  3. Lightly salt each piece before turning to coat the second side.
  4. Saute in a mixture of butter and vegetable oil until golden and cooked through.
  5. Ensure the meat is moist and juicy inside and crispy outside before serving.
