Chicken Vesuvio features tender chicken pieces roasted with garlic, rosemary, and potatoes, creating a flavorful, hearty dish perfect for family dinners or special gatherings.

Ingredients

  • 3 1/2 lb. cut-up chicken
  • 2 cloves garlic
  • 1/2 cup canola or olive oil
  • 1 teaspoon rosemary
  • 4 red potatoes
  • 1 small onion

Instructions

  1. Slice the onion.
  2. Peel the potatoes and parboil them for 15 minutes.
  3. Sauté the chicken, garlic, and onion in 1/4 cup of oil.
  4. Add the parboiled potatoes and another 1/4 cup of oil, quartering the potatoes as you add them.
  5. Sprinkle rosemary over the chicken and potatoes.
  6. Cover and simmer for 15 minutes.
  7. Turn the potatoes and chicken, then cook an additional 15 minutes until golden brown.
