Ingredients

  • hot sauce
  • freshly ground black pepper
  • vegetable oil
  • white vinegar
  • chicken wings
  • butter
  • salt

Instructions

  1. Cut off tips of the chicken wings and separate each wing at the joint.
  2. Sprinkle wings with salt and freshly ground black pepper to taste.
  3. Heat oil in a deep-fat fryer or large heavy pot until quite hot.
  4. Add half the wings and cook about 10 minutes, stirring occasionally, until golden brown and crisp.
  5. Remove cooked wings and drain well.
  6. Repeat the process with remaining wings.
  7. Meanwhile, melt butter in a saucepan, add hot sauce to taste, and vinegar.
  8. Pour hot sauce mixture over the cooked wings and shake in a bucket to coat evenly.
  9. Serve with Blue Cheese dressing and celery sticks.
