- Cut off tips of the chicken wings and separate each wing at the joint.
- Sprinkle wings with salt and freshly ground black pepper to taste.
- Heat oil in a deep-fat fryer or large heavy pot until quite hot.
- Add half the wings and cook about 10 minutes, stirring occasionally, until golden brown and crisp.
- Remove cooked wings and drain well.
- Repeat the process with remaining wings.
- Meanwhile, melt butter in a saucepan, add hot sauce to taste, and vinegar.
- Pour hot sauce mixture over the cooked wings and shake in a bucket to coat evenly.
- Serve with Blue Cheese dressing and celery sticks.
