Ingredients

  • 2 lb. chicken wings, tips cut off
  • 2 Tbsp. fresh lemon juice
  • 1 Tbsp. olive oil
  • 3 Tbsp. honey
  • generous pinch dry mustard
  • generous pinch curry powder
  • 2 Tbsp. soy sauce
  • 2 Tbsp. sweet sherry
  • 1/2 clove garlic, minced
  • 1 chicken consomme cube

Instructions

  1. Rinse and dry wings quickly.
  2. Place wings in nonmetallic bowl. Pour on lemon juice; rub salt into wings.
  3. Combine honey, oil, mustard, curry powder, soy sauce, wine and garlic.
  4. Pour this marinade over the wings; mix at least twice.
  5. Dissolve chicken cube in the hot water.
  6. Place wings on rack in shallow baking pan. Pour marinade over wings.
  7. Add 1/4 cup consomme liquid.
  8. Dot each wing with small piece of butter.
  9. Bake at 400° for 1 hour and 15 minutes.
  10. Baste wings with pan liquid every 20 minutes.
  11. Add the rest of consomme liquid at the end of 40 minutes and turn wings twice during cooking.
