Ingredients

  • 1 (10 1/2 oz.) can cream of chicken soup
  • 1 (10 1/2 oz.) can cream of mushroom soup
  • 1 can cream of celery soup
  • 1/2 cup oleo, melted
  • 1/2 cup slivered almonds
  • 1 1/2 cups brown rice, uncooked
  • 3 chicken breasts, boned and halved
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Mix together the undiluted cream of chicken, cream of mushroom, and cream of celery soups, melted oleo, and slivered almonds.
  2. Set aside 1 cup of the soup mixture.
  3. Add the uncooked brown rice to the remaining soup mixture and stir well.
  4. Pour the mixture into a 2-quart Pyrex dish.
  5. Place 6 halves of boned and halved chicken breasts on top of the soup and rice mixture.
  6. Bake in a 325°F oven for about 2 hours.
  7. Baste the chicken with the reserved cup of soup mixture every 20 minutes during baking.
  8. Near the end of baking, sprinkle grated Parmesan cheese over the chicken and allow it to brown.
  9. When done, garnish with the toasted almonds.
