Ingredients

  • 4 medium zucchini, sliced 1/2-inch thick
  • 6 Tbsp butter
  • 3/4 cup shredded carrots
  • 1/2 cup chopped onion
  • 2 1/4 cups herbed stuffing cubes
  • 1 (10 3/4 oz) cream of chicken soup
  • 1/2 cup sour cream

Instructions

  1. Cook zucchini in boiling salted water until just tender.
  2. Drain the zucchini.
  3. In a saucepan, melt 4 tablespoons of butter.
  4. Add carrots and chopped onion, and sauté until tender.
  5. Remove from heat.
  6. Stir in 1/2 cup of stuffing cubes, cream of chicken soup, and sour cream.
  7. Gently fold in the cooked zucchini.
  8. Spoon the mixture into a 1 1/2-quart casserole dish.
  9. Melt 2 tablespoons of butter.
  10. Add remaining stuffing cubes and toss gently to coat.
  11. Sprinkle the remaining stuffing cubes over the casserole.
  12. Bake at 350°F for 30 to 40 minutes until heated through and golden on top.
