Ingredients

  • 4 chicken breasts, skin removed
  • 1/2 cup onion, chopped fine
  • 1/2 teaspoon tarragon
  • chicken bouillon

Instructions

  1. Lightly brown the meat side of chicken breasts.
  2. Lay all 4 chicken breasts, meat side down, in a small (8-inch) skillet.
  3. Add enough water, with chicken bouillon, to just cover the chicken.
  4. Add onion over the top of the chicken.
  5. Sprinkle with tarragon.
  6. Bring to a boil and reduce heat to medium.
  7. Cover the skillet with a well-fitting lid and cook for approximately 30 to 45 minutes or until the chicken is done. Add a little water if necessary to replace any lost in steam.
