Ingredients

  • 1 medium chicken
  • 2 Tbsp. butter
  • 3 Tbsp. chopped onion
  • 2 Tbsp. flour
  • 1 1/2 cups milk
  • 1 cup chopped walnut meats
  • salt

Instructions

  1. Cut the chicken into pieces and fry until light brown in a saucepan with half of the butter.
  2. Add chopped onions and fry together for a little longer.
  3. Add a little water and season with salt, pepper, and nutmeg. Cover and simmer until the chicken is tender.
  4. Mix flour with milk and pour over the cooked chicken. Cook for 5 minutes more until the sauce is very smooth.
  5. Stir in chopped walnuts and 1 tablespoon of butter. Simmer for 5 minutes.
  6. Serve garnished with boiled potatoes sprinkled with melted butter and chopped parsley.

Tips & Substitutions

For a richer flavor, consider adding a splash of white wine after frying the onions. If you prefer a thicker sauce, increase the flour to 3 tablespoons. For a nut-free alternative, you can substitute walnuts with sunflower seeds. Ensure the chicken is cooked through by using a meat thermometer; it should read 165°F. This dish can also be enhanced with herbs like thyme or rosemary.

Serving Suggestions

Serve this dish alongside boiled potatoes sprinkled with melted butter and chopped parsley for a classic pairing. Steamed green vegetables like asparagus or broccoli complement the rich walnut sauce beautifully. A crisp green salad or crusty bread can also round out the meal. This dish pairs beautifully with Mildred Sloan'S Hamburger Chop Suey for a comforting dinner.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, place the chicken and sauce in a saucepan over low heat, stirring occasionally until heated through. You can also microwave it on medium power, covering it to retain moisture, but be cautious not to overheat as it may dry out.

Frequently Asked Questions

Can I use chicken breasts instead of a whole chicken?

Yes, you can definitely use chicken breasts for a quicker preparation. Just adjust the cooking time to ensure they remain juicy and tender, cooking them for about 20-25 minutes, depending on thickness.

What can I substitute for walnuts if I have a nut allergy?

If you're allergic to nuts, you can replace walnuts with sunflower seeds or omit them entirely. You might also consider using toasted pumpkin seeds for a similar crunch and flavor.

Can I make this dish in advance?

Absolutely! You can prepare the chicken and sauce ahead of time and store them separately. Just reheat gently before serving. However, it's best to add the walnuts just before serving to keep their texture intact.
