Ingredients

  • 2 links Italian sausage, remove casing
  • 1 medium onion, chopped
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 2 medium potatoes, diced
  • 3 cans chicken broth
  • 1 can white kidney beans
  • 1 tablespoon olive oil
  • Romano cheese

Instructions

  1. In a large pot, heat olive oil.
  2. Add Italian sausage, breaking it up with a fork, and cook until no longer pink.
  3. Remove the cooked sausage to a bowl and set aside.
  4. Add sliced carrots and celery to the pot; cook until almost tender.
  5. Add chopped onion and cook for another minute or so.
  6. Return the sausage to the pot, then add chicken broth and diced potatoes; cook until vegetables are tender.
  7. Add white kidney beans and cook for another 10 minutes.
  8. Serve the soup with crusty bread and sprinkle Romano cheese on top.
