Chickpea Patties
Ingredients
- 1 None red onion, finely chopped ⓘ
- 2 cans (15 oz each) chickpeas, drained and rinsed ⓘ
- 1 None small red chili pepper, finely chopped ⓘ
- 1 None lime, peel grated ⓘ
- 2 tbsp coarsely chopped fresh cilantro ⓘ
- 1/4 cup flour, sifted ⓘ
- 1 None egg, lightly beaten ⓘ
- None None Salad, sweet chili sauce and lime wedges, to serve ⓘ
Instructions
- Heat a large skillet on medium heat. Spray with no stick cooking spray. Saute onion for 2 mins, until soft. Transfer to a bowl. Add half the chickpeas.
- Place the remaining chickpeas and ingredients in a food processor and process until smooth. Season to taste. Stir into onion and chickpea mixture.
- Wipe out pan with paper towels. Place on medium heat and spray with cooking spray. Cook 2 tbsp measures of mixture, flattening with a spatula, for 2-3 mins each side, until crisp and golden. Serve with salad, sweet chili sauce and lime wedges.
