Delicious and hearty Mexican-inspired dish featuring crispy tortilla chips layered with flavorful salsa, chicken, beans, and melted cheese—a perfect comfort food for gatherings.

Ingredients

  • 16 oz. jar salsa
  • 1 cup salsa verde
  • 1/4 cup chopped fresh cilantro
  • 10 (6-inch) tortillas
  • 15 oz. can refried beans
  • 1 cup shredded cooked chicken
  • 2 cups shredded Co-Jack cheese

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease a 9 x 9 x 2-inch baking dish.
  3. In a medium bowl, combine the jar salsa, salsa verde, and chopped cilantro.
  4. Mix well.
  5. Spread 1/2 cup of the salsa mixture in the bottom of the greased baking dish.
  6. Layer half of the tortilla pieces over the salsa layer.
  7. Add half of the refried beans, shredded chicken, remaining salsa mixture, and shredded cheese.
  8. Repeat the layering process with the remaining ingredients.
