Chile Rellenos Casserole I

Ingredients

  • 2 (7 oz.) cans whole green chiles
  • 1/2 lb. Jack cheese
  • 1/2 lb. Cheddar cheese
  • 2 eggs
  • 3 Tbsp. flour
  • 1 small can evaporated milk
  • 1 small can tomato sauce

Instructions

  1. Wash chiles and pat dry.
  2. In a pie plate, layer half the chiles and one-third of the grated cheese.
  3. Repeat layers, leaving one-third of the cheese for topping.
  4. Beat eggs in a bowl.
  5. Add flour and evaporated milk to the eggs.
  6. Beat until blended.
  7. Pour the mixture over the layered chiles and cheese in the pie plate.
  8. Bake at 350°F (175°C) for 30 minutes.
  9. Spread tomato sauce evenly over the top of the casserole.
  10. Sprinkle with remaining cheese.
  11. Bake for an additional 15 minutes.
  12. Cut into wedges and serve.
