Ingredients

  • 2 boxes Jiffy cornbread mix
  • 2 medium chopped onions
  • 2 (4 oz.) cans chopped green chilies
  • 1 (4 oz.) jar pimentos
  • 2 cans cream-style corn
  • 2 cups grated Cheddar cheese

Instructions

  1. Mix the cornbread mix according to the package directions.
  2. Add chopped onions, chopped green chilies, pimentos, cream-style corn, and shredded Cheddar cheese to the mixture and combine well.
  3. Pour the batter into a greased 9 x 13-inch pan.
  4. Top the batter with additional cheese if desired.
  5. Bake in a preheated 350°F (175°C) oven for 1 hour until golden and cooked through.
