Instructions
- Rinse chiles; pat dry with paper towel.
- Slit lengthwise; carefully remove any seeds found inside.
- Cut Monterey Jack cheese into 1/2 x 1/2-inch strips; place inside chile peppers.
- Place chiles side by side in greased baking dish (8 cup size).
- Beat eggs until foamy; beat in milk, flour and baking powder until smooth.
- Pour egg mixture over chiles.
- Sprinkle Cheddar cheese over the top.
- Bake uncovered at 375°F for 40 minutes until set in the middle.
