Ingredients

  • 1 (10 oz.) can whole green chiles
  • 5 eggs
  • 2/3 cup milk
  • 6 tablespoons flour
  • 3/4 teaspoon baking powder
  • 1 cup grated Cheddar cheese
  • 6 oz. Monterey Jack cheese

Instructions

  1. Rinse chiles; pat dry with paper towel.
  2. Slit lengthwise; carefully remove any seeds found inside.
  3. Cut Monterey Jack cheese into 1/2 x 1/2-inch strips; place inside chile peppers.
  4. Place chiles side by side in greased baking dish (8 cup size).
  5. Beat eggs until foamy; beat in milk, flour and baking powder until smooth.
  6. Pour egg mixture over chiles.
  7. Sprinkle Cheddar cheese over the top.
  8. Bake uncovered at 375°F for 40 minutes until set in the middle.
