Ingredients

  • 1 lb. Monterey Jack Cheese
  • 1 lb. sharp cheddar cheese
  • 6 eggs
  • 1 small can evaporated milk
  • 1 small can chopped green chilies

Instructions

  1. Grate the Monterey Jack cheese and sharp cheddar cheese and mix together.
  2. Beat the eggs lightly.
  3. Add the canned evaporated milk to the eggs and blend well.
  4. In a buttered 9 x 13-inch pan, cover the bottom with chopped green chilies.
  5. Pour the cheese mixture over the chilies.
  6. Bake at 350°F for 40 minutes.
  7. Remove from oven and cool.
  8. Cut into 1-inch squares.
