Ingredients

  • 1 egg
  • 1 tomato
  • 1 cup cheddar cheese
  • 1 pound lean ground beef
  • 1 cup corn muffin mix
  • 1/2 cup milk
  • 1 cup whole kernel corn
  • Salt

Instructions

  1. Brown and crumble the lean ground beef; drain excess fat.
  2. Add chili seasoning mix, salt, chopped tomatoes, and whole kernel corn to the beef.
  3. Mix in the egg, milk, and cheddar cheese into the corn muffin batter.
  4. Pour the beef mixture into a 2 1/2-quart casserole dish.
  5. Top with the prepared corn muffin batter.
  6. Bake until the cornbread is golden and cooked through, about 30 minutes.
