Chili Salsa Beef

Ingredients

  • 1 1/2 lb. boneless beef chuck shoulder roast
  • 1 Tbsp. olive oil
  • 1 Tbsp. low sodium soy sauce
  • 1 clove garlic, crushed
  • 1/3 c. coarsely chopped fresh cilantro
  • 1 c. prepared medium or hot chunky salsa
  • 2 Tbsp. packed brown sugar
  • 2 Tbsp. lime juice
  • 2 c. cooked rice

Instructions

  1. Trim fat from beef roast.
  2. Cut roast into 1 1/4-inch pieces. In Dutch oven, heat oil over medium heat until hot.
  3. Add beef and brown evenly, stirring occasionally.
  4. Pour off drippings if necessary.
  5. Stir salsa, sugar, soy sauce and garlic into beef. Bring to a boil; reduce heat to low.
  6. Cover tightly and simmer 1 hour.
  7. Remove cover; continue cooking, uncovered, an additional 30 minutes or until beef is tender.
  8. Remove from heat.
  9. Stir in chopped cilantro and lime juice.
  10. Spoon beef mixture over rice. Makes 4 servings.
