A zesty uncooked chili sauce packed with fresh tomatoes, onions, peppers, and vinegar, perfect for adding heat and flavor to grilled meats or as a condiment.

Ingredients

  • 1 peck peeled tomatoes
  • 3 onions, chopped
  • 1 cup green peppers, chopped
  • 1 cup celery, chopped
  • 1 large red or yellow medium hot pepper
  • 1 cup cooking salt
  • 1 quart vinegar
  • 1 2/3 cups sugar

Instructions

  1. Combine all ingredients except vinegar and sugar.
  2. Stir well and let stand for 4 hours.
  3. Drain in a cloth bag overnight.
  4. In the morning, bring vinegar and sugar to a boil.
  5. Add the vegetables and can in sterilized hot jars. Do not boil.
