Ingredients

  • 4 medium baking potatoes
  • 1/2 lb ground beef
  • 17 oz can Del Monte whole kernel golden sweet corn, drained
  • 1/2 cup Del Monte ketchup
  • 1/2 cup chopped green pepper
  • 1 tablespoon chili powder

Instructions

  1. Pierce potatoes and microwave on High for 16 minutes or until soft, rotating halfway through.
  2. In a large skillet, brown the ground beef and drain excess fat.
  3. Stir in drained corn, chopped green pepper, ketchup, and chili powder into the skillet.
  4. Cover and simmer the mixture for 10 minutes.
  5. Slit open each baked potato.
  6. Spoon about 1 cup of the meat mixture into each potato.
  7. Garnish with sour cream, grated cheese, and chopped green onions if desired.
