Chiles Rellenos are a classic Mexican dish featuring roasted green chilies stuffed with cheese, baked until golden and flavorful, perfect for a hearty and spicy meal.

Ingredients

  • 3 cans whole green chilies, drained
  • 1/2 lb. Monterey Jack cheese
  • 5 eggs
  • 1/2 cup flour
  • 1/2 cup milk

Instructions

  1. Slice the green chilies lengthwise and remove seeds if desired.
  2. Stuff each chili with Monterey Jack cheese.
  3. Place the stuffed chilies in the bottom of an 8 x 12-inch baking dish.
  4. Whisk together eggs, milk, and flour until well combined.
  5. Pour the egg mixture over the stuffed chilies.
  6. Bake at 350°F (175°C) for 35 minutes or until golden and set.
