  • 3 c. apple cider vinegar

  • 2 tsp. nutmeg
  • 3 tsp. pickling salt

Instructions

  2. Place tomatoes in a large pan.
  3. Pour boiling water over the tomatoes to scald them.
  4. Core and peel the tomatoes.
  5. Squeeze out the juice and remove as many seeds as possible.
  6. Run the tomatoes through a food processor to chop them.
  7. Transfer the chopped tomatoes to a large, heavy pan.
  8. Clean the green peppers and onions.
  9. Chop the peppers and onions in a food processor.
  10. Add the chopped peppers and onions to the pan with tomatoes.
  11. Add sugar, apple cider vinegar, cloves, cinnamon, nutmeg, and pickling salt.
  12. Cook the mixture, stirring occasionally, until it thickens (about 4 hours).
  13. Fill clean jars with the hot mixture.
  14. Process the jars for 15 minutes in a hot water bath canner.
  15. Let the jars cool undisturbed on the counter until a good seal is achieved.
