Ingredients

  • 1 Tbsp. margarine or butter
  • 3 large peppers (red, yellow, or orange), chopped
  • 1 medium onion, chopped
  • 1 garlic clove, minced
  • 1 c. chicken broth
  • 1 tsp. chopped fresh thyme or 1/2 tsp. dried thyme leaves
  • dash of hot pepper sauce

Instructions

  1. Melt margarine or butter in a medium saucepan over medium-high heat.
  2. Cook and stir chopped peppers, onion, and minced garlic until tender, about 5 minutes.
  3. Stir in chicken broth, chopped fresh thyme, and hot pepper sauce.
  4. Simmer for 10 to 15 minutes or until most of the liquid is absorbed and vegetables are soft.
  5. In a food processor or blender, combine the pepper mixture with half and half and process until smooth.
  6. Pour the mixture into a large bowl.
  7. Cover and refrigerate for 4 hours or until thoroughly chilled.
  8. If desired, serve with additional half and half.
