Chicken Breasts With Wine

Tender chicken breasts are coated in seasoned bread crumbs, then baked with wine, mushrooms, grapes, and aromatic vegetables for a flavorful, elegant meal suitable for special occasions.

Ingredients

  • 4 boned chicken breasts, cut into serving pieces, skin removed
  • bread crumbs mixed with cheese, parsley, salt, pepper, and garlic powder
  • 1/2 cup sliced onions
  • 1/2 cup chicken broth or bouillon cubes
  • sliced fresh or canned mushrooms
  • 1/2 cup white wine
  • seedless green grapes
  • 2 to 3 eggs
  • flour

Instructions

  1. Dip each chicken cutlet in flour, then beaten eggs, then coat with bread crumbs mixed with cheese, parsley, salt, pepper, and garlic powder.
  2. Fry the coated chicken cutlets until golden brown, then remove and place in a baking dish.
  3. Sauté sliced onions until translucent, then remove from pan.
  4. Sauté sliced mushrooms until tender, then remove from pan.
  5. In the same pan, mix white wine, chicken broth, and sautéed onions.
  6. Pour the wine and broth mixture over the chicken in the baking dish.
  7. Cover and bake at 325°F (160°C) for 45 to 50 minutes.
  8. Ten minutes before the end of baking, spread sautéed mushrooms and seedless green grapes over the chicken.
  9. Bake uncovered for an additional 10 minutes.
