Ingredients

  • 4 lb. whole chicken
  • 1 bunch green onions
  • 4 garlic cloves
  • 1 3-inch piece fresh ginger
  • 1 onion
  • 1 tsp. whole white peppercorns
  • 3 qt. cold water

Instructions

  1. Place the whole chicken in a large stockpot over medium heat.
  2. Add green onions, garlic, ginger, halved onion, and white peppercorns to the pot.
  3. Pour in 3 quarts of cold water to cover the chicken.
  4. Simmer gently for 1 hour, skimming off the foam on the surface periodically.
  5. Carefully remove the chicken from the pot.
  6. Pass the stock through a strainer lined with cheesecloth to remove solids and excess fat.
