- Place the whole chicken in a large stockpot over medium heat.
- Add green onions, garlic, ginger, halved onion, and white peppercorns to the pot.
- Pour in 3 quarts of cold water to cover the chicken.
- Simmer gently for 1 hour, skimming off the foam on the surface periodically.
- Carefully remove the chicken from the pot.
- Pass the stock through a strainer lined with cheesecloth to remove solids and excess fat.
