Ingredients

  • 4 boneless chicken breasts
  • Minute rice (for 4 servings, microwave instructions)
  • 3 eggs
  • 1/3 cup soy sauce
  • 1/3 cup chopped green onions

Instructions

  1. Cube the chicken breasts and fry in a skillet until cooked through.
  2. While the chicken is frying, cook the rice in the microwave following package instructions for 4 servings.
  3. Remove the cooked chicken from the skillet and set aside.
  4. Scramble the eggs in the same skillet.
  5. Return the cooked chicken to the skillet with the scrambled eggs.
  6. Add the cooked rice, soy sauce, and chopped green onions to the skillet.
  7. Heat everything together until warmed through and serve.
