Simple Chicken Stir-Fry

Ingredients

  • 1 Tbsp soy sauce
  • 2 tsp cornstarch
  • 2 c boneless chicken pieces (3/4-inch)
  • 1 1/2 Tbsp vegetable oil
  • 2 to 3 c chopped fresh vegetables (onions, green and red peppers, pea pods, broccoli, etc.)
  • 1/2 tsp minced garlic
  • 1/4 c La Choy duck sauce
  • 1 Tbsp chicken broth or water
  • 1/2 tsp ginger root

Instructions

  1. In a small bowl, combine soy sauce and cornstarch; mix well.
  2. Add chicken pieces to the mixture and toss to coat evenly.
  3. Heat 1 tablespoon vegetable oil in a wok or large skillet.
  4. Add chicken mixture to the wok and stir-fry until chicken is no longer pink, possibly cooking in small batches.
  5. Remove cooked chicken from the wok and set aside.
  6. Heat remaining 1 1/2 teaspoons vegetable oil in the wok.
  7. Add chopped vegetables, minced garlic, and minced ginger to the wok.
  8. Stir-fry for 1 to 2 minutes until vegetables are crisp-tender and hot.
  9. Return chicken to the wok, add duck sauce and chicken broth or water.
  10. Stir well and heat thoroughly, stirring occasionally.
  11. Serve hot over noodles or rice.
