Ingredients

  • 1 1/2 cups diced cooked chicken or turkey
  • 2 tablespoons butter
  • 1/2 cup chopped celery
  • 3 cups shredded cabbage
  • 1 cup mushrooms, thinly sliced
  • 6 chicken bouillon cubes
  • 6 cups water
  • 1/4 cup soy sauce

Instructions

  1. Sauté diced celery and sliced mushrooms in butter until crisp-tender but not browned.
  2. Add shredded cabbage and sauté for 3 minutes.
  3. Dissolve chicken bouillon cubes in water and add to the vegetables.
  4. Mix the mixture well.
  5. Add soy sauce, cooked chicken, and water chestnuts to the mixture.
  6. Bring the soup to a boil.
  7. Cook gently, uncovered, for 5 minutes.
