Choc-Mallow Cake

Ingredients

  • 8 tbsp (1 stick) butter
  • 1 tsp vanilla extract
  • 1/2 cup granulated sugar
  • 1 None egg
  • 2 tbsp light corn syrup
  • 2 1/2 cups self-rising flour
  • 1 1/2 cups milk
  • 2 tbsp unsweetened cocoa powder
  • 4 oz white marshmallows
  • None None FOR THE CHOCOLATE DRIZZLE
  • 4 oz semi-sweet chocolate, chopped

Instructions

  1. Preheat the oven to 350°F. Lightly grease a deep 8-inch springform pan.
  2. Beat butter, vanilla extract, sugar, egg and syrup in large bowl with electric mixer until light and fluffy. Alternately stir in sifted flour with 1 1/4 cups of the milk.
  3. Place half the mixture into separate bowl, stir in blended sifted cocoa and remaining 1/4 cup milk. Drop alternate spoonfuls of white and dark batters into prepared pan. Run knife through the mixture to give marbled effect.
  4. Bake for about 45 mins. Remove cake from oven. Place a layer of marshmallows evenly on top of cake. Bake for about a further 5 mins or until marshmallows are beginning to melt. Cool in pan 5 mins. Remove side of pan. Cool completely on a wire rack.
  5. Drizzle with combined melted chocolate and butter.
