Ingredients

  • 1 large head cauliflower
  • 1/4 cup diced bell pepper
  • 1 jar (7.3 oz.) sliced mushrooms, drained
  • 1/4 cup butter
  • 1/3 cup all purpose flour
  • 2 cups milk
  • 1 cup (4 oz.) shredded Swiss cheese
  • 2 tablespoons diced pimentos

Instructions

  1. Cook the cauliflower in a small amount of water in a large saucepan for 6 to 7 minutes until crisp and tender. Drain well.
  2. In a medium saucepan, sauté bell peppers and sliced mushrooms in butter for 2 minutes.
  3. Add flour to the sautéed vegetables and gradually stir in milk. Bring to a boil and cook for 2 minutes, stirring constantly.
  4. Remove from heat and stir in shredded Swiss cheese until melted.
  5. Add diced pimentos and salt to the sauce.
  6. Place half of the cooked cauliflower in a greased 2-quart baking dish. Top with half of the cheese sauce.
  7. Repeat layers with remaining cauliflower and sauce.
  8. Bake uncovered at 325°F (160°C) for 25 minutes or until bubbly.
  9. Optional: sprinkle with paprika before serving.
