Christmas Cauliflower
Christmas Cauliflower is a festive and creamy vegetable dish featuring tender cauliflower florets baked in a cheesy sauce with bell peppers, mushrooms, and pimentos. - Cook the cauliflower in a small amount of water in a large saucepan for 6 to 7 minutes until crisp and tender. Drain well.
- In a medium saucepan, sauté bell peppers and sliced mushrooms in butter for 2 minutes.
- Add flour to the sautéed vegetables and gradually stir in milk. Bring to a boil and cook for 2 minutes, stirring constantly.
- Remove from heat and stir in shredded Swiss cheese until melted.
- Add diced pimentos and salt to the sauce.
- Place half of the cooked cauliflower in a greased 2-quart baking dish. Top with half of the cheese sauce.
- Repeat layers with remaining cauliflower and sauce.
- Bake uncovered at 325°F (160°C) for 25 minutes or until bubbly.
- Optional: sprinkle with paprika before serving.
