- Mix finely crushed vanilla wafers with melted margarine. Reserve 1/4 cup for topping.
- Press the remaining mixture into a 9 x 9 x 2-inch pan.
- Combine peppermint stick ice cream, margarine, and unsweetened chocolate in a bowl and melt until smooth.
- In a separate bowl, beat egg yolks and gradually add powdered sugar until well combined.
- Stir the egg yolk mixture into the melted chocolate mixture.
- Fold in chopped pecans and beaten egg whites until just combined.
- Pour the mixture over the crust in the pan and freeze until firm.
- Top with reserved crushed vanilla wafers before serving.
