Ingredients

  • 1 1/2 cups finely crushed vanilla wafers
  • 1/4 cup melted margarine
  • 1 quart peppermint stick ice cream, softened
  • 1/2 cup margarine
  • 2 squares unsweetened chocolate
  • 3 egg yolks
  • 1 1/2 cups powdered sugar
  • 1/2 cup chopped pecans
  • 3 egg whites

Instructions

  1. Mix finely crushed vanilla wafers with melted margarine. Reserve 1/4 cup for topping.
  2. Press the remaining mixture into a 9 x 9 x 2-inch pan.
  3. Combine peppermint stick ice cream, margarine, and unsweetened chocolate in a bowl and melt until smooth.
  4. In a separate bowl, beat egg yolks and gradually add powdered sugar until well combined.
  5. Stir the egg yolk mixture into the melted chocolate mixture.
  6. Fold in chopped pecans and beaten egg whites until just combined.
  7. Pour the mixture over the crust in the pan and freeze until firm.
  8. Top with reserved crushed vanilla wafers before serving.
