Ingredients

  • 6 oz. mint chocolate chips
  • 2/3 cup shortening
  • 1/2 cup sugar
  • 1 egg
  • 1/4 cup corn syrup
  • 1 3/4 cups flour
  • 2 teaspoons baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 350°F.
  2. Melt mint chocolate chips over hot (not boiling) water.
  3. Remove melted chocolate from heat.
  4. Combine shortening, sugar, and egg in a bowl.
  5. Beat until creamy.
  6. Blend in melted chocolate and corn syrup.
  7. Sift together flour, baking soda, cinnamon, and salt, then gradually stir into the chocolate mixture.
  8. Shape dough into balls using 1 level tablespoon each.
  9. Roll balls of dough in sugar.
  10. Place on an ungreased cookie sheet, 3 inches apart.
  11. Bake for 15 minutes.
  12. Let cookies stand a few minutes before removing from the pan.
