Easy Cheesy Spinach

A creamy, cheesy spinach casserole with sharp cheddar and cottage cheese, perfect as a comforting side dish or vegetarian main for family dinners or gatherings.

Ingredients

  • 2 (10 oz.) packages chopped spinach
  • 1 Tbsp. minced onion
  • 2 cups small curd cottage cheese
  • 2 1/2 cups grated sharp Cheddar cheese
  • 4 eggs, beaten
  • 3 Tbsp. flour
  • 1/2 stick margarine, melted
  • 1/4 tsp. garlic salt
  • 1/4 tsp. lemon pepper
  • 1/4 tsp. celery salt

Instructions

  1. Defrost the spinach and squeeze out excess water.
  2. Mix all ingredients together in a bowl.
  3. Pour the mixture into a greased casserole dish.
  4. Bake at 325°F (160°C) for approximately one hour until set and golden.
