Ingredients

  • 2 eggs
  • 1 1/3 cups sugar
  • 1 1/4 cups all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking soda
  • 1/4 teaspoon salt
  • 2/3 cup vegetable oil
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1/2 cup strawberry preserves or jam
  • 1 pint strawberries, halved

Instructions

  1. Preheat oven to 350 degrees Fahrenheit. Grease and flour two 9-inch cake pans.
  2. In a medium bowl, beat eggs and sugar until thick and light-colored.
  3. In a large bowl, sift together all-purpose flour, unsweetened cocoa powder, baking soda, and salt.
  4. Add vegetable oil, buttermilk, and vanilla extract to the flour mixture and blend well.
  5. Fold in the egg mixture into the batter.
  6. Pour the batter into the prepared cake pans.
  7. Bake for 30 minutes.
  8. Cool in pans on a wire rack for 10 minutes.
  9. Remove the cakes from pans and cool completely on wire racks.
  10. Spread strawberry preserves onto the bottom layer, then place the second layer on top.
  11. Frost the top and sides of the cake with chocolate frosting.
